Ingredients
- 2 cups of white rice
- 2 cups water
- 1 T turmeric
- 1 tsp salt
- 2 T butter (optional)
- 1 onion, sliced
- 1 or 2 bell peppers, sliced
- ½ andouille or kielbasa sausage, sliced
- 1 or 2 cans of beans (red, white or black), rinsed and drained
- 2 large handfuls Baby spinach
- ¼-½ Red cabbage, sliced
Directions
- Cook the rice, turmeric, salt and butter in a rice cooker or on the stove
- Meanwhile, saute the onions until translucent, then add the bell peppers and sliced sausage and brown lightly
- When the rice is done, add it to the pan and mix thoroughly
- Add the red cabbage and heat lightly
- Just before done, add the spinach
For making ahead, prep through step 3 and then store in the fridge. Add the cabbage and spinach to the container in the morning and then microwave at lunch for crisp cabbage!
