Sun-Dried Tomato Pesto Tortellini

Ingredients

  • 1 lb pork sausage
  • 6-oz. jar pesto sauce
  • 1/4 cup flour
  • 32 fl. oz. broth
  • 16 oz. tortellini
  • 8-oz. jar sun-dried tomatoes
  • 2 large handfuls baby spinach

Directions

  1. Form the pork sausage into tiny meatballs, the size of marbles. Cook in a large, deep pan until done and remove from pan to drain.
  2. Add broth to pan to deglaze and then whisk in the pesto sauce and the flour.
  3. Add the tortellini and cook until al dente
  4. Add the sun-dried tomatoes, spinach and meatballs, cook until warmed through.
